  • 2 medium zucchini (8–10 inches long, fresh and firm)
  • ½ lemon, juiced (about 1.5 tablespoons)
  • 3 tablespoons extra virgin olive oil (high-quality)
  • ¼ cup Parmesan cheese, shaved (use a vegetable peeler)
  • 1 tablespoon fresh basil leaves, roughly chopped (or parsley, or dill)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 2 tablespoons toasted pine nuts or walnuts for crunch

Instructions

  1. Prepare the Zucchini:? Using a mandoline or vegetable peeler, slice the zucchini lengthwise into paper-thin ribbons. Discard the seedy core (save for another recipe, like zucchini bread). Place slices in a colander, sprinkle lightly with salt, and toss. Let drain for 10 minutes to remove excess moisture, then pat dry with paper towels.
  2. Make the Dressing: ?In a small bowl, whisk together the lemon juice and olive oil until blended. Season with a pinch of salt and pepper to taste.
  3. Assemble the Carpaccio: ?Arrange zucchini slices in a single layer on a large platter or four small plates, slightly overlapping for a pretty presentation. Drizzle the lemon-olive oil dressing evenly over the slices.
  4. Let marinate for 15 minutes to soften the zucchini and meld flavors.
  5. Add Toppings:? Just before serving, sprinkle shaved Parmesan and chopped basil over the zucchini. If using, scatter toasted pine nuts or walnuts for texture. Add a final pinch of salt and pepper to taste.

Notes

  • Cut the zucchini very very thin
  • Allow the carpaccio to rest and marinate for 15 minutes so that the flavours combine and enhance one another

Tips for Cooking with Your Daughter

This is such an easy recipe that it’s almost like a pretext to spend time with your daughter. She can basically help with everything.

Ages 8–11: She can wash zucchini, sprinkle salt, or scatter basil and Parmesan. She can also use a vegetable peeler or a mandolin, for slicing or mix the dressing

Ages 12–18: She can use do everuthing, while you sit on the kitchen counter and chat with her. Including the toasting of the nuts. If the pan is cast iron like ours, she might need help as it is very heavy.
