I had just bought some amazing juicy, ripe peaches, the tender chicken I have it pre-prepared as a meal basis for the week and a handful of fresh greens. This quick and easy dish while nutritious, is also refreshing and thus perfect for a zippy summer lunch . This is a recipe you can remember for when you are building that fit summer suit ready body.

Chicken Peach Salad
This Chicken Peach Salad is a zippy summer lunch, bursting with juicy peaches and tender chicken for a fresh, light meal that’s ready in minutes.
Ingredients
- 2 cups cooked chicken breast, shredded or cubed (grilled or rotisserie works great)
- 2 ripe peaches, pitted and sliced
- 4 cups mixed greens (arugula, spinach, or romaine)
- 1/4 cup crumbled feta or goat cheese (optional)
- 1/4 cup sliced almonds or pecans, toasted
- 1/2 cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar or lemon juice
- 1 tsp honey
- Salt and pepper to taste
- Fresh basil or mint leaves for garnish (optional)
Instructions
- Prep the Salad: In a large bowl, toss together the mixed greens, shredded chicken, peach slices, cucumber, red onion, and cheese (if using).
