This Orzo with Peas and Mint is one of my summer usuals! It’s super simple—just orzo, sweet peas, and fresh mint mixed up for a light, tasty dish. You can whip it up quick for a chill lunch on a warm day.
Ingredients
- 1 cup orzo pasta
- 1 cup fresh or frozen peas (thawed if frozen)
- 1/4 cup fresh mint leaves, finely chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice (freshly squeezed)
- 1 small garlic clove, minced (optional, for a subtle kick)
- 1/4 cup crumbled feta cheese (optional, for extra flavor)
- Salt and black pepper to taste
- Zest of 1 lemon (optional, for brightness)
Instructions
- Cook the Orzo: Bring a medium pot of salted water to a boil. Add orzo and cook according to package instructions (usually 8-10 minutes) until al dente. Drain and rinse briefly with cold water to stop cooking. Set aside.
- Prepare the Peas: If using fresh peas, blanch them in boiling water for 1-2 minutes until bright green, then drain and rinse with cold water. If using thawed frozen peas, no cooking needed.
- Mix the Dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic (if using), a pinch of salt, and black pepper.
- Combine Ingredients: In a large bowl, toss the cooked orzo, peas, and chopped mint. Pour the dressing over and mix gently to coat. If using, fold in feta cheese and lemon zest for extra zing.
