Ingredients

  • 1 cup orzo pasta
  • 1 cup fresh or frozen peas (thawed if frozen)
  • 1/4 cup fresh mint leaves, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 small garlic clove, minced (optional, for a subtle kick)
  • 1/4 cup crumbled feta cheese (optional, for extra flavor)
  • Salt and black pepper to taste
  • Zest of 1 lemon (optional, for brightness)

Instructions

  1. Cook the Orzo: Bring a medium pot of salted water to a boil. Add orzo and cook according to package instructions (usually 8-10 minutes) until al dente. Drain and rinse briefly with cold water to stop cooking. Set aside.
  2. Prepare the Peas: If using fresh peas, blanch them in boiling water for 1-2 minutes until bright green, then drain and rinse with cold water. If using thawed frozen peas, no cooking needed.
  3. Mix the Dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic (if using), a pinch of salt, and black pepper.
  4. Combine Ingredients: In a large bowl, toss the cooked orzo, peas, and chopped mint. Pour the dressing over and mix gently to coat. If using, fold in feta cheese and lemon zest for extra zing.
  5. Taste and Adjust: Add more salt, pepper, or lemon juice to taste. Serve chilled or at room temperature for maximum freshness.

Notes

  • Make it Zippy: Prep the orzo ahead and store it in the fridge for an even faster assembly (under 10 minutes).
  • Swap Options: Try basil instead of mint for a different vibe, or swap peas for asparagus tips.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 2 days. Refresh with a splash of lemon juice before serving.
  • Serving Suggestion: Pair with grilled shrimp or a glass of crisp Pinot Grigio for a full summer meal.

What can you pair the orzo with peas and mint with? – Italy style

Here are some Italian-inspired pairing ideas:

  • Caponata Siciliana
  • Insalata di Pomodori e Burrata (Tomato and Burrata Salad)
  • Zucchini Carpaccio
  • Focaccia with Rosemary and Sea Salt
  • Melanzane alla Parmigiana (Light Eggplant Parmesan)
  • Italian White Wine (chilled, white) as an accompanying drink
  • Pesche Ripiene (Stuffed Peaches) for dessert

Tips for an Italian-Style Summer Meal

  • If you are not in Italy, to get that rustic sunny trattoria feel, serve the orzo and sides on a rustic wooden table with colorful ceramic plates. Add a sprig of mint or basil as a garnish for visual pop.
  • Remember, the secret of mediterranean diet is fresh nutritious produce and small portions! So keep portions small and varied, just like Italians! For example, we often enjoy multiple small dishes (antipasti, primo, contorno) for a balanced, light meal, perfect for summer.
  • Try to find fresh, local ingredients (e.g., peak-season tomatoes or zucchini) to stay true to Italian summer cuisine and enhance the orzo’s freshness.
