To make the fluffiest tall pancakes, you'll need a few key ingredients. However, what really sets these pancakes apart is the addition of whipped egg whites. The whipped egg whites are gently folded into the batter, creating a light and airy mixture that will result in beautifully fluffy pancakes.

Ingredients

  • 4 eggs separated
  • 1/4 cup granulated sugar
  • 1/2 cup cake flour (you can use any type of white flour or white flour mixture)
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 3 tbsp whole milk can sub other milks
  • 1/2 tsp vanilla extract
  • 4 tbsp water for cooking
  • butter for cooking

Instructions

    1. Start by separating the egg yolks from the whites. Set aside the egg yolks for later use.

    2. In a large bowl, combine the all-purpose flour, baking powder, sugar, and salt.

    3. In a separate bowl, whisk together the milk and egg yolks until well combined into a creamy egg yolk mixture.

    4. Gradually add the egg yolk batter to the dry ingredients, stirring until just combined. Be careful not to overmix, as this can result in denser pancakes.

    5. In another clean mixing bowl, whisk the egg whites until they reach stiff peaks. This can be achieved by using a hand mixer or whisking vigorously by hand.

    6. The mixing process of the whipped egg whites into the base batter, needs to be very gentle. The purpose is that we will not deflate the mixture.

    7. Heat a non-stick skillet or griddle over low heat. Grease the surface with butter, cooking spray or a little oil.

    8. The cooking technique is somewhat different from the other pancakes but once you get it it is very easy to execute Use a large cookie scoop to spoon a portion of the pancake batter onto the skillet. Use a circular motion to create a round shape. Make sure not to overcrowd the skillet, as the pancakes will expand during cooking. You could also use cooking rings in order to get a perfectly shaped circle. Place the batter inside of the rings.

    9. Cover the skillet with a lid and cook the pancakes for about 1-2 minutes. Before covering them, drop a tablespoon of water into the pan to create hot air vapors, then cover them quickly with the lid.

    10. Lift the lid and add up a large spoon of bater on the top of each pancake. Cook for 1-2 minutes. Be careful to keep it at very low heat so that they don't get burned.

    11. Repeat the process, and complete the pancake with the 3rd and last layer. This way you will get thick pancakes. Don't forget to add a spoon of water in the pan before covering them up again. Cook for 1 minute

    12. Carefully flip the pancakes using a rubber spatula and cook for an additional 3-4 minutes, or until the pancakes are cooked through and fluffy.

    13. Repeat the process with the rest of the batter, adding more butter or cooking spray as needed.
